Dear families,
This summer at TGC Kids, we're exploring the heart of our life together as a church — presence, formation, and love — through the analogy of preparing, cooking, and enjoying food. Each week in June and July, we're making a new family-friendly recipe as we present the fruits of the spirit. The recipes we are introducing are easy to make, quick and healthy, and a great opportunity for kids of all ages to help out!
This week, we're making pasta with tomatoes two ways (recipe included below) and learning about the fruit of love. So I'm challenging our kids to find creative and thoughtful ways to share God's love with others.
With love,
Miss Elisa
Pasta with Tomatoes Two Ways
Recipe credit: Jamie Oliver
Ingredients:
Cellentani (curly elbow) pasta
Heirloom cherry tomatoes
Fresh basil leaves
Parmesan cheese
Virgin olive oil
Red wine vinegar
Salt and pepper
Method:
Toss half of the tomatoes in olive oil, salt, and pepper. Roast at 300ºF for 1 hour until soft and caramely.
Quarter the other half of the tomatoes. Peel and finely chop the garlic. Rough chop the basil leaves. Grate the cheese.
In a large bowl, combine the fresh tomatoes and basil. Mix in the garlic, a generous splash (10 tablespoons) of olive oil, and a small helping (1 tablespoon) of vinegar.
Cook your pasta in salted boiling water until al dente. Drain and quickly toss in with the fresh ingredients. Add the roasted tomatoes and mix together with as much cheese as you want.
Call everyone around the table, then taste the juice at the bottom of the bowl and adjust the seasoning if you feel it needs it. Serve right away with a sprig of basil and some extra cheese to decorate each helping, or refrigerate for a future meal.
